Here is the long awaited recipe that originally won first place at the Relief Society Summer Social. We had it again at the Relief Society Christmas Dinner. Enjoy!
Chinese Salad
1 head lettuce, shredded
4 green onions, sliced
1/2 cup celery, chopped
2 Tbsp. chopped almonds
2 Tbsp. toasted sesame seeds
1 pkg. fried wonton strips (found in the produce department)
water chestnuts, optional
2-3 bundles rice stix (mei fun, found in oriental food department), deep fried
Mix all ingredients together. Add dressing just before serving.
Dressing Recipe
4 Tbsp. sugar
2 tsp. salt
1 tsp. pepper
1/2 cup vegetable oil
2 Tbsp. sesame seed oil
6 Tbsp. Japanese rice vinegar
Mix together and serve on salad.
This rice recipe was also served at the Relief Society Christmas Dinner.
Carbon County Greek Rice
1 cup Uncle Ben's Rice (converted rice, not instant)
1/2 to 3/4 cups butter (not margarine)
1 can Swanson's chicken broth
fresh lemon juice
Melt the butter and add rice. Let the rice soak up the butter for a minute or two. Add broth and bring to a boil. Reduce heat and cover. Simmer rice for 25 to 30 minutes. When rice is cooked, add lemon juice to taste.
