The next Cooking Group will be April 7th at 7:00 pm at Amy Seiter's home. She will be demonstrating how to make potstickers, also known as gyoza.
The following recipes were submitted by Janet Sparks:
Shrimp Dip (we tasted this at the book group in December)
1 can shrimp (washed and drained)
3/4 cup mayonnaise
1/2 cup sour cream
2 tsp. lemon juice
1/4 tsp Worcestershire sauce
1/4 tsp. garlic powder
1/4 tsp. dill weed
Mash shrimp and add mayonnaise and sour cream. Add lemon juice and Worcestershire sauce, then add the seasonings to taste. Chill.
Jacob's Lentil Soup (this dish was at the Relief Society Birthday Party)
1 1/2 cups split red lentils
6 cups chicken or vegetable stock
1 medium onion, cubed
2 sticks chopped celery
1 leek, chopped
1 carrot, cubed
1/2 tsp. ground cumin
1 tbsp. white wine vinegar
salt and freshly ground black pepper
1 medium onion, sliced
olive oil
Put the lentils in a pot with the stock and vegetables and bring to a boil. Simmer for 30 minutes, until the lentils have disintegrated. If too thick, add water or broth. To make a smoother soup, run through a blender or food processor. Add cumin and wine vinegar and season to taste. Fry the sliced onion in the olive oil until almost carmelized and add to the soup. Serve hot with croutons.
